Ingredients

For the Hamburger Steaks:

  • 1.5 lbs ground beef (80/20 is a good choice for flavor)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)
  • 1 tablespoon vegetable oil or butter
    For the Onion Gravy:
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)
    Instructions:
    Prepare the Hamburger Steaks:
  • In a large bowl, gently combine the ground beef, salt, pepper, garlic powder (if using), and onion powder (if using). Be careful not to overmix, as this can make the steaks tough.
  • Divide the mixture into 4 equal portions and shape them into oval or round patties, about ¾ inch thick. You can make a slight indentation in the center of each patty with your thumb to help them cook evenly and prevent them from bulging.
    Cook the Hamburger Steaks:
  • Heat the vegetable oil or butter in a large skillet (cast iron works great!) over medium-high heat until it’s shimmering.
  • Carefully place the hamburger steaks in the hot skillet, ensuring not to overcrowd the pan. You may need to cook them in batches.
  • Cook for about 4-5 minutes per side for medium-rare, or longer depending on your desired level of doneness. The internal temperature should reach 160°F (71°C) for safety.
  • Once cooked, remove the hamburger steaks from the skillet and set them aside on a plate, tented with foil to keep warm.
    Make the Onion Gravy:
  • Add the sliced onions to the same skillet you used to cook the steaks (don’t wipe it clean – those flavorful bits will enhance the gravy!). Add the butter to the skillet.
  • Cook the onions over medium heat, stirring occasionally, until they are softened and deeply golden brown and caramelized. This will take about 15-20 minutes. Be patient; this step is key for a rich-flavored gravy.
  • Sprinkle the flour over the caramelized onions and cook for 1 minute, stirring constantly, to form a roux.
  • Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the pan.
  • Stir in the Worcestershire sauce. Bring the gravy to a simmer and cook, stirring occasionally, until it has thickened to your desired consistency. This should take about 5-7 minutes.
  • Taste the gravy and season with salt and pepper as needed.
    Assemble and Serve:
  • Return the cooked hamburger steaks to the skillet with the onion gravy.
  • Spoon the gravy over the steaks and let them warm through for a minute or two.
  • Garnish with fresh chopped parsley, if desired.
  • Serve hot with your favorite sides, such as mashed potatoes, rice, or roasted vegetables.
