Ingredients:
For the Filling:
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup water
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (any color)
- 1/2 cup shredded cheddar cheese
For the Rolled Tacos:
- 1 package (8 count) flour tortillas
- 1/2 cup shredded cheddar cheese
Equipment:
- Large skillet
- Mixing bowl
- Muffin tin
Instructions:
Prepare the Filling:
In a large skillet, brown the ground beef over medium heat.
Drain off any excess grease.
Add the taco seasoning, water, onion, and bell pepper to the skillet.
Bring to a simmer and cook for 5-7 minutes, until the vegetables are tender.
Remove from heat and stir in 1/2 cup of shredded cheddar cheese.
Assemble the Rolled Tacos:
Preheat oven to 375°F (190°C).
Place one tortilla on a flat surface.
Spoon a generous amount of the beef mixture down the center of the tortilla.
Top with a sprinkle of shredded cheese.
Roll the tortilla tightly around the filling.
Repeat with the remaining tortillas.
Bake the Rolled Tacos:
Arrange the rolled tacos in a muffin tin, seam side down.
Bake for 15-20 minutes, or until the tortillas are golden brown and the cheese is melted and bubbly.
Serve:
Remove the rolled tacos from the oven and let them cool slightly before serving.
Serve with your favorite toppings, such as sour cream, guacamole, salsa, and chopped lettuce.
