Instructions: - Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Potatoes: Wash and peel the potatoes (or leave the peels on for a rustic touch). Slice the potatoes into rounds about 1/2 to 3/4 inch thick.
- Season Potatoes: In a large bowl, toss the potato rounds with olive oil, salt, and pepper. Make sure they are evenly coated.
- Arrange on Baking Sheet: Arrange the potato rounds in a single layer on a baking sheet lined with parchment paper.
- Bake: Bake for 20-25 minutes, or until the potatoes are tender and lightly golden.
- Add Cheese: Remove the baking sheet from the oven. Sprinkle the shredded cheese over each potato round.
