Cheesy Baked Potato Rounds

Ingredients:

  • 4 medium russet potatoes (or other baking potatoes)
  • 1/4 cup olive oil (or melted butter)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 cup shredded cheddar cheese (or mozzarella, or a blend)
  • 2 tablespoons chopped fresh parsley (for garnish)
    Instructions:
  • Preheat Oven: Preheat your oven to 400°F (200°C).
  • Prepare Potatoes: Wash and peel the potatoes (or leave the peels on for a rustic touch). Slice the potatoes into rounds about 1/2 to 3/4 inch thick.
  • Season Potatoes: In a large bowl, toss the potato rounds with olive oil, salt, and pepper. Make sure they are evenly coated.
  • Arrange on Baking Sheet: Arrange the potato rounds in a single layer on a baking sheet lined with parchment paper.
  • Bake: Bake for 20-25 minutes, or until the potatoes are tender and lightly golden.
  • Add Cheese: Remove the baking sheet from the oven. Sprinkle the shredded cheese over each potato round.
  • Melt Cheese: Return the baking sheet to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  • Garnish and Serve: Garnish with chopped fresh parsley and serve immediately.
